Experience culinary delights on Provence holiday

Couples and families embarking on Provence villa holidays will have a number of opportunities to sample the local cuisine.

One of the French region's delicacies is aioli, a sauce consisting of a garlic and olive oil mixture that is often added to boiled vegetable dishes.

Its appeal has been highlighted by The Herald News, which cited French journalist Leon Daudet's belief that garlic can help aioli achieve culinary perfection.

Holiday makers staying in a cheap family villa can have a go at making their own aioli, which consists of blending four garlic cloves with egg yolk while gradually adding olive oil and a sprinkling of salt and pepper.

The sauce is celebrated during the Provencal summer festival of Le Grand Aioli, where it acts as the focal point in menus consisting of plates of fish, meat and hardboiled eggs.

"Diners fill their plates and sauce it all with generous dollops of aioli," the newspaper said.

Celebrity chef Jamie Oliver is a self-confessed aioli fan, referring to it as "a lovely fragrant and pungent type of mayonnaise".
