Gazpachos is one of Andalucia's most famous dishes and is particular eaten during the summer, given that it is a cold soup.
Made with tomatoes and a combination of stale bread, garlic, olive oil, salt and vinegar, the soup is very popular and comes in many varieties.
Holiday makers can also expect to try lots of fish including roast tuna and papanduas which are small cod fish cakes.
One of the regions fishy specialities is the espetones de sardines - sardines roasted on bamboo spits.
